Lasagna

Lasagna

   My family LOVES Lasagna! I like to make it all from scratch. I hope you get a chance to enjoy it!


Ingredients

Sauce & Meat:
32oz. Tomato Sauce
1/4 cups Red Wine
3 tbs. Fresh Italian Oregano
3 tbs. Fresh Thyme
3 tbs. Fresh Chives
3 tbs. Fresh Sweet Basil
3 tbs. Fresh Purple Basil
3 tbs. Fresh Fennel (not seeds)
3 tbs Minced Garlic
1 cup Petite Diced Onions
8oz. Petite Diced Firm Roma Tomatoes
1 lb. Fresh Ground Sirloin
1 lb. Fresh Ground Italian Sausage
1 Large Green Pepper Petite Diced
Salt to taste

Noodles:
2 cups All Purpose Flour
3 Egg Yolks
1 Whole Egg
1/4 - 1/2 cup water
1 tsp. Salt
1 tbs. Garlic Powder

Cheese Filling:
16oz. Ricotta or Small Curd Cottage Cheese
16oz. Italian Cheese Blend
3oz Fresh Grated Parmesan
1 Whole Egg


Directions:
1. Pre-Heat Oven to 350
2. Coat 9x13 baking dish with spray or grease
3. Bring a Large pot of water salted, to a boil
4. Prepare Sauce

  • Pick, wash, and chop herbs
  • Gather the onion and green pepper, wash, and petite dice
  • Place ground Sirloin and Sausage into a large pot and thoroughly cook
  • Drain meat
  • Add onions and green pepper
  • Saute until partially cooked
  • Add in remaining ingredients (If using canned diced tomatoes instead of romas, drain juice first)
  • Mix and simmer for 2-3 hours

5. Pull off the burner and set aside
6. Make Noodles

  • In a mixer combine flour, salt, and garlic powder
  • Combine 
  • While on lowest mixer setting slowly add in yolks and egg
  • Continue to add in 1/4 cup water slowly
  • Add water until dough is elastic, it will not be very sticky.
  • If needed dust dough with flour (if too sticky)
  • If needed add water 1 tsp. at a time (if too brittle)
  • Turn dough out onto a flour dusted surface
  • Roll out, into a large sheet and cut lasagna noodle strips

7. Turn out noodles onto a drying rack if the water is not ready, or place in the boiling water for 3 minutes or until partially cooked
8. Drain and rinse with cold water
9. Prepare Cheese mixture

  • Mix 8oz Italian Cheese Blend, ricotta, egg, and Parmesan

10. Begin assembling lasagna

  • Start with some sauce on the bottom of the prepared baking dish
  • Layer on noodles, cheese mixture, meat, and repeat.
  • Top layer is noodles, and sauce. 
  • Top with remaining 8oz. Italian Blend Cheese
  • Bake at 350 for 30-40 minutes until thoroughly melted and top browned
  • Pull out of the oven and let rest for 30 minutes 
  • Slice and serve
